My journey began not in China, but in the Philippines, where I was engaged in a project to improve childhood nutrition. This question led to a massive research initiative—the China–Cornell–Oxford Project—a collaborative effort involving 65 rural Chinese counties, researchers from the University of Oxford, Cornell University, and the Chinese Academy of Preventive Medicine. The goal was to investigate the relationships among diet, lifestyle, and disease patterns in populations that shared similar genetics but vastly different eating habits.
In the China Study, we analyzed what people ate, what diseases they developed, and how their blood biochemistry reflected those patterns. The results were astonishing: communities that consumed primarily plant-based diets had significantly lower incidences of heart disease, certain cancers, diabetes, and obesity. In contrast, populations with higher intakes of animal-based foods showed dramatically increased risks for these very same illnesses.
The evidence didn’t come from isolated cases or single nutrients—it came from patterns spanning thousands of people, observed over years. This was not coincidental; it revealed a profound biological truth: our bodies thrive on plant-based nutrition.
Beyond epidemiology, I wanted to test this relationship in the lab. With controlled experiments, my colleagues and I worked with animal models to explore how diet affects cancer development. We found that the primary protein in cow’s milk—casein—acted as a powerful promoter of cancer once the disease process had been initiated.
In these studies, we exposed rats to a carcinogen that could induce liver cancer. When fed diets composed of 20 percent casein—equivalent to typical Western protein consumption—the animals readily developed tumors. However, when we reduced casein intake to 5 percent, the cancer growth came to a near halt. Astonishingly, these effects were not genetic, random, or due to chance. They followed a clear, dose-dependent pattern. Even more strikingly, we could turn cancer development on and off simply by adjusting the amount of casein in the diet.
This finding challenged one of the most sacred assumptions in nutrition—that animal protein is universally beneficial. And as we later discovered, the same cancer-promoting effect was not observed with plant proteins. Protein derived from soy or wheat did not fuel cancer growth in the same way. This revelation was not just biochemistry—it was a paradigm shift. It suggested that animal proteins could act as triggers within the broader cascade of disease mechanisms, while plant-based nutrients could offer protection.
These findings illuminated what we observed in China: where plant foods dominate the diet, chronic diseases remain rare. Nature, it seemed, was speaking one consistent language across both the laboratory bench and the rural Chinese countryside.
